Cast Iron is the best to cook on
Cast iron just wont wear out. Teflon does scratch & aluminum does not have the heat transfer of cast iron. I use lower temperature setting now because of the excellent heat transfer. Great product. The Lid handle does still get hot though, the only complaint.
